When I was in elementary school, we had a home economics class where we learned how to brew sencha in the school’s traditional Japanese room.
We warmed the teacups with hot water, then poured slightly cooled water into the teapot.
This method prevents the bitterness of green tea from being extracted too much and instead brings out its natural sweetness.
I wonder if this is still part of the elementary school curriculum today?
Back then and even now, I’ve always loved tea.
